Purist

Bright, refreshing and earthy. This cocktail truly tastes like a delicious refreshing green juice.

Ingredients: 

– 6-8 muddled mint leaves
– 2oz Sueños Reposado 
– 1oz spinach & apple juice 
– 3/4oz lemon juice
– 3/4oz agave syrup
– 4 dash celery bitters

Glassware/Garnish:

– Bucket cocktail glass 
– Star fruit, bee pollen & mixed edible flowers 

Preparation:

1. Muddle 6-8 mint leaves in mixing tin  
2. Jigger in tin – spinach & apple juice, lemon juice, agave 
3. Add 4 dashes of Celery Bitters 
5. Add ice 
6. Shake and strain over ice into bucket glass
7. Garnish with star fruit, bee pollen & mixed flowers

Fresh pressed spinach-apple juice is a nutrient powerhouse. Together with mint and celery bitters, layers of herbaceous refreshment delight. I selected Sueños Reposado in order to highlight these green characteristics and add honeysuckle and toasted agave notes. Sueños Reposado’s pure creation process and light aging produces a reposado in which the blanco is not lost but enhanced, and makes a perfect pairing in this cocktail. The star fruit garnish is refreshing and slightly acidic and gives a tropical look when added with florals. Bee pollen adds earthy notes and  represents the cultivation and pollination of agave.
